Blackberry Cobbler
You can use whatever fresh berries or other fruits that are in season, but I like blackberries the best for this classic summer cobbler.
Filling:
4 cups fresh blackberries
1/3 to 2/3 cup sugar
1 tablespoon cornstarch
1/4 cup water
Make Filling:
Combine all ingredients in a saucepan, and cook over medium-high heat until thickened and bubbly, stirring frequently. Keep hot, and prepare cobbler topping.
Topping:
1 cup all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
3 tablespoons cold butter
1 beaten egg
3 tablespoons milk
Make Topping:
Mix flour, sugar, baking powder, and cinnamon. Cut in butter until mixture resembles coarse crumbs. Combine egg and milk. Add to flour mixture, stirring just to moisten.
Assemble cobbler:
Transfer filling to an 8x8x2-inch baking dish. Drop topping into six mounds atop hot filling. Bake in a 400 degree F oven for 20 to 25 minutes, or until a toothpick inserted into the topping comes out clean. Serve warm with ice cream, if desired. Serves 6.
